The Persian cucumber could be considered the little sibling to the English cucumber: both have little to no seeds, are sweeter than traditional cucumbers, and have thin skins. They are significantly smaller than the English cucumber, however, and are often packaged in bunches of four or five to sell to consumers. While not found in every supermarket, the Persian cucumber is becoming more popular and they are being cultivated and shipped around the world. They’re such a reliably sweet, crunchy, and delicious cucumber, though, it’s worth the trip to find them if they aren’t readily available at the nearest supermarket. Many independent farmers are starting to bring them to farmer’s markets, as well. While they are most often eaten as a snack or incorporated into salads, Persian cucumbers are also wonderful for pickling. Because of their excellent crispness and ability to absorb and pair well with many spices, they are a popular choice in home pickling.

Many people who have never eaten a sweet cucumber like the Persian variety don’t see the versatility and promise that a good cucumber holds. However, a cucumber salad made with Persian cucumbers can change nearly anyone’s opinion. Dice a Persian cucumber, tomato, and red onion. Stir them together in a bowl, add some lemon and lime juice and toss in salt, pepper, and dried mint to taste. Give it one more stir and it’s ready to be served. For an alternative take on the traditional salad, smash your cucumbers with a rolling pin before tearing them up and tossing in a bowl. Toss with salt and let drain for 10 minutes, then add scallions, rice vinegar, sesame seeds, and chili oil. With these recipes, Persian cucumbers will never be the same.
